What is Non-Gluten Flour?
Non-gluten flour is just flour made without any gluten. Gluten is the content that gives dough its strength and elasticity, constructing the dough rise and maintaining baked goods from crumbling. Gluten is a protein found in a number of grains, most notably in wheat, spelt, rye, and barley.
Gluten-free diets are getting more common as an increasing number of people find they are sensitive or allergic to gluten. Researchers are even discovering that a gluten-free diet may be beneficial to autistic children. In order for people on a gluten-free diet to prepare appetizing meals, they need to use good non-gluten flour. Perhaps the most popular non-gluten flour is rice flour. Rice flour acts same as to wheat flour in behavior, and is capable of absorbing and thickening but lacks any binding ability.
